This is a tasty and filling Paleo recipe for Sweet Potato Chipotle Chili made in the Crock Pot. Its the ideal dish for a chilly day because its warm and flavorful. You can vary the degree of heat by modifying the quantity of chipotle peppers utilized. Its also a filling meal because its full of healthy sweet potatoes and lean ground meat.
Ingredients:
- 1 pound ground beef or ground turkey
- 2 sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can 14 ounces diced tomatoes
- 1 can 14 ounces tomato sauce
- 1 can 14 ounces beef or vegetable broth
- 1 can 14 ounces black beans, drained and rinsed omit for strict paleo
- 1 can 14 ounces kidney beans, drained and rinsed omit for strict paleo
- 2-3 chipotle peppers in adobo sauce, chopped adjust to taste
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: avocado slices, chopped cilantro, lime wedges
Instructions:
Brown the ground turkey or beef over medium heat in a skillet
Remove any extra fat
Then add the browned meat, chipotle peppers, chili powder, cumin, paprika, diced tomatoes, sweet potatoes, onion, garlic, tomato sauce, beef or vegetable broth, and black or kidney beans if using
In the crockpot, stir all the ingredients until thoroughly mixed
Once the sweet potatoes are soft, cover and cook for 68 hours on low or 34 hours on high
If desired, top with chopped cilantro, avocado slices, and lime wedges and serve hot
