Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/2 cup strong brewed coffee, cooled
- 1/4 cup milk
- 1 tsp vanilla extract
- 1/2 cup chopped pecans optional
- Whipped cream and pumpkin spice for garnish
Instructions:
Warm up the oven to 350F 175C and put cupcake liners in a pan
Mix the flour, baking powder, baking soda, salt, and all the spices cinnamon, nutmeg, cloves, and ginger in a medium-sized bowl using a whisk
Put away
Mix the softened butter and sugar together in a large bowl until the mixture is light and fluffy
One at a time, add the eggs and beat well after each one
The canned pumpkin puree, brewed coffee, milk, and vanilla extract should all be mixed in well
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
If you want, you can fold in chopped pecans
Fill each liner about two thirds of the way to the top with cupcake batter
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Take the cupcakes out of the oven and let them cool in the pan for a few minutes
Then, move them to a wire rack to finish cooling
Put some pumpkin spice on top of each cupcake after its cool
You can pipe or spread the whipped cream on top of everything
