Caramel Latte Marshmallows

Savor the deep notes of coffee and caramel with these homemade marshmallows. Ideal for enjoying on their own or as a delightful twist to your favorite hot beverages.

Ingredients:

  • 2/3 cup cold brewed coffee
  • 3 tablespoons unflavored gelatin
  • 1/2 cup cold water
  • 2 cups granulated sugar
  • 2/3 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon caramel extract
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch
  • 1/4 cup finely ground coffee beans

Instructions:

The cold-brewed coffee and gelatin should be combined in a mixing bowl

Give it ten minutes to bloom

Put the corn syrup, salt, granulated sugar, and cold water in a saucepan

Stirring constantly, heat over medium-high heat until the sugar dissolves

Cook the candy thermometer until it reaches 240 degrees Fahrenheit 115 degrees Celsius

Take the sugar syrup off the heat source and slowly pour it into the gelatin mixture that has bloomed once it reaches the appropriate temperature

Mix everything together

Beat the mixture on high speed for 10 to 12 minutes, or until it gets thick and fluffy, using a stand mixer or electric hand mixer

After adding the vanilla and caramel extracts, beat for an additional two minutes, or until thoroughly combined

Mix the cornstarch and powdered sugar together in a different bowl

Lightly dust a 9 x 9-inch 23 x 23 cm baking pan with this mixture

Transfer the marshmallow mixture into the pan that has been preheated and level it out

Top with a scattering of the finely ground coffee beans

Allow the marshmallows to cure for at least four hours, or over night, at room temperature

After the marshmallows have set, cut them into the desired shapes with a knife or cookie cutters

To keep the cut marshmallows from sticking, toss them in the remaining powdered sugar and cornstarch mixture
