Use up your holiday leftovers to make a rich, creamy soup that tastes like Thanksgiving or Christmas. With this hearty treat, you can enjoy the holiday flavors in a warm bowl of comfort.
Ingredients:
- 4 cups shredded turkey or chicken leftovers
- 2 cups mashed potatoes
- 1 cup diced carrots
- 1 cup chopped celery
- 1 cup corn kernels
- 1 cup green beans, chopped
- 1 onion, finely diced
- 4 cloves garlic, minced
- 1/2 cup all-purpose flour
- 1/2 cup unsalted butter
- 6 cups turkey or chicken broth
- 2 cups milk
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Melt the butter in a big pot over medium-low heat
Put in the minced garlic and diced onions and saut until the onions are soft
To make a roux, stir in the flour and cook for two minutes
Add the broth, milk, and heavy cream slowly while whisking
Keep doing this until the mixture is smooth
Chicken or turkey shreds, mashed potatoes, carrots, celery, corn, green beans, and dried thyme should all be added
Add pepper and salt to taste
Simmer on low heat for 20 to 25 minutes, stirring every now and then
Serve hot with fresh parsley chopped on top
