Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Food coloring assorted colors
- Edible glitter or sprinkles
Instructions:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Mix in the vanilla extract
In a separate bowl, whisk together the flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms
Divide the dough into equal portions, one for each color of food coloring youll be using
Add a few drops of food coloring to each portion of dough and knead until the color is evenly distributed
You can use different colors to create a vibrant unicorn effect
Wrap each colored dough portion in plastic wrap and refrigerate for about 30 minutes to firm up
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Take small portions of each colored dough and gently roll them together to create a marbled effect
Shape the marbled dough into small balls and place them on the prepared baking sheet, leaving some space between each cookie
Flatten each cookie slightly with the back of a spoon or your hand
Sprinkle edible glitter or sprinkles on top of each cookie for a magical touch
Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
