Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 8 small taco tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- Sour cream and salsa for serving
Instructions:
Mix minced garlic, lime juice, olive oil, chili powder, cumin, paprika, salt, and pepper in a bowl
This will make a marinade
Pour the marinade over the chicken breasts that are in a plastic bag that can be closed again
Put the bag in the fridge for at least 30 minutes, or overnight for the best results
Set the grill to medium-high heat and oil the grate so that food doesnt stick
The chicken should be cooked on the grill for 6 to 8 minutes on each side, or until the internal temperature reaches 165F 75C and it is fully cooked
Warm up the taco shells on the grill for about one to two minutes on each side while the chicken cooks
After taking the chicken off the grill, let it rest for a few minutes
Then, cut it into strips
Cover warm tortillas with shredded lettuce, diced tomatoes, diced red onion, shredded cheddar cheese, and chopped cilantro
Add sliced chicken on top of the lettuce
Put salsa and sour cream on the side
