Loaded Mint Chocolate Brownies

Savor the decadent, fudgy goodness of these brownies with loads of mint. These brownies are perfect for any chocolate lover because they have lots of chocolate chips and a hint of mint.

Ingredients:

  • 1 cup 225g unsalted butter
  • 2 cups 400g granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup 85g unsweetened cocoa powder
  • 1 1/2 cups 180g all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup 175g mint chocolate chips
  • 1/2 cup 90g semi-sweet chocolate chips
  • 1/2 cup 60g chopped walnuts optional

Instructions:

Set the oven to 350 degrees Fahrenheit 175 degrees Celsius and line a 9 by 13-inch 23 by 33 cm baking pan with parchment paper, leaving a small overhang for simple removal

The butter should be melted in 30-second increments in a microwave-safe bowl

Let it cool down a little

Mix the eggs, vanilla, peppermint, and granulated sugar in a sizable mixing bowl until thoroughly blended

Add the melted butter and stir until smooth

Add the salt, all-purpose flour, and cocoa powder, sifting them in and gently folding them into the wet ingredients until just combined

Add the chopped walnuts if using, semi-sweet chocolate chips, and mint chocolate chips and fold to combine

Transfer the brownie mixture into the baking pan that has been preheated and level it out

Bake for 30 to 35 minutes in a preheated oven, or until a toothpick inserted in the center emerges with a few moist crumbs still attached

After taking the brownies out of the oven, let them cool in the pan for about fifteen minutes

Then, using the overhanging parchment paper, carefully remove the brownies from the pan and place them onto a wire rack to finish cooling

Cut into squares and enjoy after theyve cooled
