Healthy Paleo Blueberry Banana Muffins

These Healthy Paleo Blueberry Banana Muffins dont have any added sugar, gluten, or dairy. These muffins are soft, fluffy, and taste great with blueberries. Theyre a great treat for breakfast or a snack without feeling bad about it.

Ingredients:

  • 3 ripe bananas, mashed
  • 3 eggs
  • 1/4 cup almond butter
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1 cup blueberries fresh or frozen

Instructions:

Warm the oven up to 175F 350C

Clean and grease a muffin tin, or use muffin liners to line it

Smash the bananas and add the eggs, almond butter, melted coconut oil, and vanilla extract

Mix the ingredients together well in a large bowl

Salt, baking powder, baking soda, and coconut flour should all be added

As you stir, a smooth batter will form

Fold the blueberries in slowly

Spread the batter out evenly in the muffin tins

Put it in the oven and bake for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean

After baking, let the muffins cool in the pan for 5 minutes before moving them to a wire rack to cool completely
