Vegan Pineapple Upside Down Cake

Enjoy this tasty vegan take on the traditional pineapple upside-down cake. Its a guilt-free treat for any occasion because its made with healthy ingredients and tastes like the tropics.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup pineapple juice
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 can pineapple rings, drained
  • 1/4 cup brown sugar
  • 1/4 cup vegan butter or coconut oil
  • Maraschino cherries for topping optional

Instructions:

Preheat oven to 350F 175C

In a mixing bowl, combine flour, coconut sugar, baking powder, baking soda, and salt

Add pineapple juice, applesauce, melted coconut oil, and vanilla extract

Mix until well combined

In a 9-inch round cake pan, melt vegan butter or coconut oil

Sprinkle brown sugar evenly over the bottom of the pan

Arrange pineapple rings on top of the brown sugar

Place a cherry in the center of each pineapple ring if desired

Pour the cake batter over the pineapple slices in the pan, spreading it evenly

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean

Allow the cake to cool in the pan for 5-10 minutes, then carefully invert it onto a serving plate

Serve warm or at room temperature
