Ingredients:
- 2 cups rolled oats
- 1 cup almond butter
- 1/2 cup maple syrup
- 1/4 cup chopped almonds
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 1/4 cup vegan chocolate chips
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Pinch of salt
Instructions:
Preheat your oven to 350F 175C
In a large mixing bowl, combine rolled oats, almond butter, maple syrup, chopped almonds, chopped walnuts, dried cranberries, vegan chocolate chips, vanilla extract, cinnamon, and a pinch of salt
Mix well until everything is evenly combined
Line a baking dish with parchment paper
Transfer the mixture into the dish and press it down firmly to form an even layer
Bake in the preheated oven for 20-25 minutes or until the edges are golden brown
Remove from the oven and let it cool completely in the baking dish
Once cooled, lift the parchment paper to remove the bars from the dish
Cut into desired sizes
Store the snack bars in an airtight container at room temperature for up to a week
