Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish optional

Instructions:

Heat olive oil in a large skillet over medium heat

Add diced sweet potatoes and cook for about 8-10 minutes, stirring occasionally, until they begin to soften

Add diced onion and red bell pepper to the skillet and cook for an additional 5 minutes, until the vegetables are tender

Stir in minced garlic, paprika, cumin, salt, and pepper, and cook for another 2 minutes, until fragrant

Remove from heat and garnish with fresh parsley or cilantro if desired

Serve hot as a side dish or with eggs for a delicious breakfast hash
