Ingredients:
- 1 lb ground sausage
- 1 onion, diced
- 1 bell pepper, diced
- 2 cups spinach
- 8 eggs
- 1/2 cup coconut milk
- Salt and pepper to taste
Instructions:
Set the oven to 350F 175C and heat it up
Break up the sausage with a spoon as you cook it in a skillet over medium-low heat until it turns brown
Put the bell pepper and onion dices in the pan and cook them until they get soft
Put the spinach in and cook until it wilts
Whisk the eggs, coconut milk, salt, and pepper together in a bowl
Spread the sausage and vegetable mix out evenly in a baking dish that has been greased
Cover the sausage and vegetables with the egg mix
Put it in an oven that is already hot and bake for 25 to 30 minutes, or until the eggs are set
