Grilled Chicken & Apples with Couscous

This recipe for grilled chicken has tender chicken breasts served with sweet and sour grilled apples and fluffy couscous that tastes like chicken broth. It has just the right amount of flavors and textures for a quick and filling meal.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 apples, cored and sliced
  • 1 cup couscous
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

Warm the grill up to a medium-high level

Add salt and pepper to the chicken breasts

Put honey, Dijon mustard, and olive oil in a small bowl and mix them together with a whisk

Use the olive oil mix to coat the chicken breasts and apple slices

Chicken should be cooked all the way through after being grilled for 6 to 8 minutes on each side

While that is going on, make the couscous according to the directions on the package, but use chicken broth instead of water

Two to three minutes on each side, until apple slices start to turn a little caramelized

Let the chicken rest for a few minutes after its done cooking before cutting it up

Use a fork to fluff up the couscous, then serve it with grilled apples and sliced chicken

Before serving, sprinkle with fresh parsley
