Avocado Stuffed Potato Fritters

These crispy fritters are filled with creamy avocado, making them a delicious vegan snack or appetizer. The combination of grated potatoes and diced avocado creates a flavorful and satisfying bite.

Ingredients:

  • 2 large potatoes, peeled and grated
  • 1 ripe avocado, diced
  • 1/4 cup chopped cilantro
  • 2 tablespoons finely chopped red onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil, for frying

Instructions:

Grate potatoes, dice avocado, chop cilantro, add red onion, garlic powder, ground cumin, cayenne pepper, salt, and pepper to a large bowl

Mix the ingredients together well until they are spread out evenly

Add the cornstarch to the mix and mix it in until its fully mixed in

Set a pan on medium heat and add the olive oil

Take a small amount of the potato mix and shape it into a patty

Put the patty in the pan and use a spatula to make it a little flatter

Do it again with the rest of the potato mixture, if you need to work in groups

For 3 to 4 minutes on each side, or until golden brown and crispy, remove from the heat

Take them out of the pan and let them drain on a plate lined with paper towels

Warm it up and serve it with your favorite sauce or toppings
