This Chickpea Rice Pilaf made in an Instant Pot is a tasty and healthy one-pot meal that is also gluten-free and vegan. This dish is perfect for any event because it has fragrant spices, soft chickpeas, and fluffy basmati rice.
Ingredients:
- 1 cup basmati rice, rinsed
- 1 can 15 oz chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 bell pepper, diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 2 cups vegetable broth
- 1/4 cup chopped cilantro
- 1 tablespoon lemon juice
Instructions:
Press saut mode on Instant Pot and heat olive oil
Add onions and garlic, saut until fragrant
Add carrots and bell pepper, cook for 2-3 minutes
Stir in cumin, paprika, turmeric, and salt
Add rinsed rice and chickpeas, stir well
Pour vegetable broth over the mixture and stir
Close the lid, set the valve to sealing, and cook on high pressure for 5 minutes
Once done, allow natural pressure release for 5 minutes, then quick release
Open the lid, fluff the rice with a fork
Garnish with chopped cilantro and drizzle with lemon juice before serving
