Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup marshmallow fluff
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a large mixing bowl, cream together the peanut butter, granulated sugar, and brown sugar until smooth and creamy
Add the egg and vanilla extract to the peanut butter mixture and mix until well combined
In a separate bowl, whisk together the flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Scoop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart
Using your thumb or the back of a spoon, make an indentation in the center of each cookie
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes
While the cookies are still warm, gently press a small amount of marshmallow fluff into the center indentation of each cookie
Allow the cookies to cool completely on a wire rack before serving
